Did you know potatoes are high in simple carbs so they should take the place of a grain on the plate? So let’s talk about how to eat potatoes in a healthy way because they do have the benefits of being good source of fiber if the peel is left on as well as vitamin C and B6.

This causes blood sugar and insulin to be high and then dip.
